1 cup mixed berries (strawberry, blueberry, raspberry)
2 tbsp raw honey or maple syrup
3 tbsp gelatin powder (grass-fed or marine)
2 tbsp water or fresh lemon juice
Method
- Blend berries until smooth. Strain for a refined texture if desired.
- Warm the berry purée gently with honey. Do not boil. Heat just until smooth and glossy.
- Sprinkle gelatin over water or lemon juice and allow to bloom for 1 minute.
- Whisk the bloomed gelatin into the warm berry mixture until fully dissolved.
- Pour into silicone molds or a lined tray.
